I was naive ... I imagine that the soft focaccia beer of Adriano would disappear the speed of light! I had tried the first time with the salmon and I liked it very much, and then when I feel like a soft cake soft I always do this ... noted that it is always soooooo appreciated.

I use the version with lard + yogurt instead of milk 150g of buffalo mozzarella. For the proceedings of course I follow the recipe to the letter, but kneaded. I recommend you go see the post Adriano in which there are photos of the steps.

Focaccia with red radicchio
Ingredients 500g flour 170g manitoba
beer

150g yogurt 30g lard 70g
potato, boiled and mashed 50g water


5g salt 11g yeast 1 teaspoon fresh
malt

radicchio
shaved Parmesan
extra virgin olive oil

procedure
Prepare poolish with water, beer 60gr, 110gr flour, malt, yeast. Be doubled and slightly decline (about 90 'I am about 60'). Knead much flour as needed to incorporate the beer, add the potato and mix well. Gradually add the yogurt with the remaining flour with salt and continue to knead. We put the lard and we absorb (this is the tricky part if you do by hand but with a little 'patience you jump out ;-)).
Cover and let double. Reversed the dough on a work surface, let alone a three-fold and wrap a strand. We transfer to a container with a lid and leave until doubled again. Rimettiamolo allarghiamolo on a work surface and hands.
Adagiamolo, closing up, in a baking oven, after a while, ribaltiamola. Let's finish to smooth the dough, sprinkle with the brine water, oil and salt and let double.
Cut the radicchio into thin strips and lay it in a pan with a little oil. Spread over the cake and bake at 220. After about 8 minutes, reduce temperature to 200 and finish cooking (about 30 minutes total). About 10 minutes before the end distribute the shaved Parmesan over the surface.
